Stolt Sea Farm is divided into eight departments, they are:
- Hatcheries – carry out the first and most delicate life phase of the Prodemar turbot, both Stolt Sea Farm hatcheries are located in Galicia, Spain
- Production – the company has nine marine farms; six in Galicia, Spain, with others in Tocha, Portugal; Anglet, South of France; and in Oye, Norway. Stolt Sea Farm also has four caviar production units in California, USA in Elverta, Laguna, Wilton and Buena Vista.
- Research, Development and Applied Innovation – has been key driver in the success of Stolt Sea Farm. The development of quality and performance systems on the farms has been the result of innovative techniques developed by the highly skilled team within this department. Today, Stolt Sea Farm is recognised as a world class land aquaculture company.
- Quality and Environment – an important part of the Stolt Sea Farm organisation that makes sure the environment is considered in the work of every other area of business.
- Commercial – Prodemar turbot and sole are marketed in different sizes to fish wholesalers for markets in France, Italy, Portugal, Scandinavia, United Kingdom and Switzerland. Over 40% of turnover is generated out of Spain. Sturgeon and caviar are distributed to a specialist niche market of exclusive, high standard, restaurants.
- Engineering of Projects – develops new projects and helps the technology transfer between the different production centres. Innovation is continuous. The latest example is the use of tunnel boring machines for water inlets which was used for the first time in the industry and pioneered through this department.
- Logistics – ensures all clients receive their orders promptly and that there is a direct link between Production and our customers.
- Administration and Finance – with responsibility for HR, general management as well as accounting and finance.
